Serves 4


1 tbspn instant coffee 1 tbspn Kahlua or other coffee liqueur
75g brown sugar 250 ml boiling water
16 sponge filngers of soft Italian biscuits 420 ml carton of ready made custard
256g mascarpone cheese 1 tbspn cocoa powder

Combine the coffee, brown sugar and coffee liqueur with the boiling water.

Put the biscuits in a bowl and pour the coffee mixture over evenly.

Mix the custard and the mascarpone until they're smooth.

Pour a thin layer of the custard mix into a shallow dish (around 8x10 inches). Lay the biscuits on top in a single layer and pour any of the remaining coffee mixture over the top. Spread the rest of the custard mix on top of the biscuits, smooth the whole thing over with a knife and shake the cocoa powder on top.

Stick the mixture in the fridge and let it chill for at least 30 minutes before serving.
