Makes 3 cups

1 cup broken walnut pieces ¼ cup butter
2 cups sugar 3 tblspns instant coffee
3 cups hot water ½ cup cold water
¼ cup corn starch

Melt sugar slowly over low heat until golden, stirring constantly. Remove from heat. Dissolve coffee in hot water; stir into sugar. Heat and stir over low heat until sugar redissolves. Combine cold water and corn starch; stir into sugar/coffee mixture. Cook and stir until thickened and bubbly. Cook and stir 2 minutes more. Add walnuts and butter. Pour into 3 1-cup jars. Store covered in refigerator.
