180°C, 350°F, Gas Mark 4


8 fl oz instant coffee 5 ½ oz sugar
8 oz softened butter 2 tblspns vanilla extract
7 ¾ oz flour 10 oz chocolate chips
4 oz finely chopped nuts (optional)

Cream the coffee, butter, sugar and vanilla extract, mix very well, slowly add flour, mix well, add chocolate chips, mix well until the consistency is very thick. Roll walnut sized dough balls and drop onto a non-stick baking tray. Bake for 12-14 minutes, or until edges are slightly browned. Cool & Serve.
