Serves 4

Make enough very strong black coffee for 4 people. Using a vegetable peeler, take 4 strips of zest from an orange and stud each one with a few cloves. Place in the bottom of 4 heatproof glasses with a little grated lemon zest and 5ml (1 tsp) unrefined dark brown sugar. Pour 75ml (5tbsp) each of cognac and Benedictine into a ladle or small milkpan, heat and then carefully ignite. Pour the flaming liqueur into the glasses. Pour the coffee on top and allow it to cool slightly.
